How to Prepare Genuine Torrijas

Spaniards live “Semana Santa” (Holy Week) with particular devotion and Madrid is no exception: processions, olive branches, smell of incense, churches specially adorned, etc. Even food is influenced by the effect of Holy Week. Depending on the region, we find different dishes and sweets. In the case of Madrid, bakeries exhibit the traditional “torrijas” (a kind of “French Toast”) which have become almost a symbol of Easter in the Spanish capital.

Basically, “torrijas” consist of slices of bread soaked in milk and fried. According to historians, the first documents referring to “torrijas” date back to the fifteenth century. However its true origin is uncertain.

In this post we are going to show you how to prepare the traditional “torrijas” like our grandmothers always did.

Ingredients to prepare Torrijas:

  • Stale Bread or any bread you´d use to make French Toasts.
  • One liter of milk
  • Sunflower Oil / You can use also a good quality olive oil but taste can be altered as olive oil has a strong flavor
  • Sugar
  • Eggs
  • Lemon zest
  • Cinnamon

How to prepare genuine Spanish “Torrijas”

1. Of course the key to prepare delicious “torrijas” is bread. In Madrid bakeries sell special bread for “torrijas”. You can use bread from the day before without any problems. Crumb must be compact with small alveolus. Cut the bread in thick slices about 3 cm.

2. Pour the milk in a pot and add cinnamon, sugar and the lemon zest. Bring all the ingredients to a slow boil and leave to infuse for about 30 minutes. Soak generously the slices of bread with the milk and let them rest during at least 15 minutes.

3. Beat the eggs and dip the slices of bread. Fry the slices in plenty of oil until both sides are crisp and let them cool down. In a bowl mix the sugar with the cinnamon and cover the slices of bread with this mixture.
